Homemade Carrot and tomato jam

INGREDIENTS:

CARROT - 2
TOMATOES - 3
DRIED GINGER - 1 INCH PIECE CRUSHED
CARDAMOM - 3 CRUSHED
CASHEW & RAISINS - 10 EACH

SUGAR SYRUP - 1/2 CUP(LEFT OVER FROM ANY PREVIOUS SWEETS) OR 1/2 CUP SUGAR/JAGGERY

INSTRUCTION:

Step 1 - Steam carrots / boil carrots and grind as puree
Step 2 - Blanch tomatoes in hot water and peel off skin and grind as puree.
Step 3- Add ghee in a kadai and pour purees
Step 4 - Cook till the raw smell leaves and add Jaggery/sugar syrup
Step 5- Add cardamom, dried ginger and cook till the mixture swirls and leaves the kauai
Step 6 - Garnish with Cashews and serve with Roti, variety rice, Biryani, Bread, etc

Note - Refregirate for 7 days to enjoy the freshness
